Condiment Recipes

Makes around 150mls.
Small amount because it lasts around 2 weeks, use you nose!

1/2 tablespoon dijon mustard
1 egg
1 tablespoon white balsamic vinegar
pinch of salt
approx. 1/2 cup vegetable oil

Place flavourings into food processer with a splash of the oil. Blend for 20 seconds.
Add another splash of oil, blend for 20 seconds.
Repeat with oil until desired consistancy is reached.

Orange and Lemon Cordial
Makes around 1.5 litres
I am keeping it in the fridge

3 large oranges
2 large lemons
750g sugar
1 tablespoon citric acid
1 tablespoon tartaric acid
750mls boiling water

In a large bowl (Minimum 2 litres) grate rinds of all the oranges and lemons, juice of all the fruit, sugar, and acids. Pour over boiling water and stir until all sugar has dissolved. Leave to stand until cooled to room temperature. Strain liquid, then pour into in the fridge, enjoy!
